Today I made up a recipe for cookies with common ingredients in low carb/high fat cookies. After I made them, I put them in the refrigerator to set and went shopping. Shopping takes some time, since the closest decent grocer is 60km away. Nevertheless, when I came back and wanted to photograph the cookies, there were only 3 left… Enjoyed by my husband. I am not sure how healthy they are if you eat the whole batch at once. 🙂
So I made another batch, and with a bit of leftover mix, I made the variations on the first version.

CocoPecanNutCookies – Low Carb, High Fat ©
Makes 12 small muffin shapes
Ingredients:
6 tbsp of peanutbutter (or even better almond butter)
3 tbsp of cocoa powder
100 gram shelled and chopped up pecans
4 tbsp desiccated coconut
2 tbsp of honey (substitute with stevia, experiment with amounts)
Mix it al together, put in small, greased muffin pan, refrigerate and voila!!!
To substitute shapes, roll in ball and roll in desiccated coconut.
